Brettanomyces, often referred to as "Brett," is a type of yeast commonly found in wines and beers. Unlike most yeast strains that are valued for producing clean, crisp flavors, Brett can impart unique, sometimes funky tastes and aromas—like earthiness, fruitiness, or even leather. Some winemakers and brewers intentionally use Brett to add complexity to their products, especially in certain styles like sour beers or natural wines. While it can enhance flavor, Brett may also cause off-flavors if not managed properly, making it a double-edged sword in fermentation practices.
