Emulsification

Emulsification is the process of mixing two liquids that usually don't mix well, like oil and water. In this process, tiny droplets of one liquid are suspended in the other, creating a stable mixture known as an emulsion. Common examples include mayonnaise and salad dressings. Emulsifiers, which are substances that help stabilize the emulsion, play a key role in this process by reducing surface tension between the liquids. This allows for a smooth, uniform blend, making emulsification essential in cooking, food production, and various industrial applications.
