Oil-in-water emulsion
An oil-in-water emulsion is a mixture where tiny droplets of oil are dispersed evenly throughout water. This occurs because oil and water naturally don't mix well, but with the help of emulsifiers (stabilizers), the oil droplets stay suspended, preventing separation. Common examples include milk, mayonnaise, and skincare lotions. These emulsions are important in food, cosmetics, and pharmaceuticals, as they allow oil-based ingredients to be mixed with waterborne components, creating products that are stable, uniform, and easy to apply or consume.
