
Myoglobin
Myoglobin is a small protein found in muscles of vertebrates, including humans. Its main function is to store and transport oxygen within muscle cells, helping them to function efficiently during physical activity. Myoglobin binds oxygen in a similar way to hemoglobin, the protein in red blood cells, but it releases oxygen when muscles need it most, such as during exercise. This ability allows muscles to maintain energy production, especially in situations requiring quick bursts of strength or endurance. The darker color of red meat is largely due to the high levels of myoglobin in muscle tissues.
