effervescence
Effervescence is the phenomenon of bubbles forming and rising in a liquid, often seen when a fizzy drink is opened. This occurs when gas, usually carbon dioxide (CO2), is dissolved under pressure in the liquid. Once the pressure is released, the gas comes out of solution, creating bubbles that rise to the surface and escape into the air. This process not only gives drinks their characteristic fizz but also enhances flavors and aromas, making them more enjoyable. Effervescence can also occur in natural contexts, such as sparkling mineral waters or certain chemical reactions.
