Eiswein

Eiswein, or "ice wine," is a type of sweet dessert wine made from grapes that have naturally frozen on the vine. As temperatures drop, the water in the grapes freezes, concentrating the sugars and flavors. Harvesting occurs in winter, often during the night, when the grapes are still frozen. The grapes are then pressed while frozen, resulting in a rich, sweet wine with high acidity that balances its sweetness. Eiswein is primarily produced in Germany and Austria, celebrated for its intense fruity flavors and honeyed character, making it a unique and cherished treat for wine lovers.
