Tea processing techniques

Tea processing involves several key steps that transform fresh tea leaves into the beverage we enjoy. First, leaves are harvested and then wilted to reduce moisture. Next, they undergo oxidation, where enzymes react with oxygen, developing flavor and color. Depending on the type of tea, this can be minimal (green tea) or extensive (black tea). The leaves are then heated to stop oxidation, a process known as fixation. Finally, the tea is dried to remove remaining moisture. Different combinations of these steps create various tea types, such as white, green, oolong, and black tea, each with unique flavors and characteristics.
