
Enterotoxins
Enterotoxins are toxic substances produced by certain bacteria that specifically target the intestines. When these toxins are ingested through contaminated food or water, they can disrupt normal digestion by stimulating excessive fluid and electrolyte secretion in the intestine. This results in symptoms like diarrhea, vomiting, and abdominal cramps. Common bacteria that produce enterotoxins include parts of the Staphylococcus and Vibrio families. The toxins act quickly, often causing illness shortly after exposure, and understanding them helps in preventing and treating foodborne infections.
