Stachyose is a type of carbohydrate known as a non-digestible oligosaccharide found mainly in foods like beans, asparagus, and other vegetables. It belongs to the group called prebiotics, which serve as food for beneficial bacteria in the gut. When consumed, stachyose isn't fully digested in the small intestine; instead, it passes to the large intestine where bacteria break it down, producing gases and small molecules that support gut health.
