Non-climacteric fruits are fruits that do not continue to ripen significantly after they are harvested. Once harvested, they generally do not become sweeter or softer. Examples include strawberries, grapes, and citrus fruits. Proper harvesting at the right stage is important for optimal flavor and quality, as they don't naturally ripen further on the shelf unlike climacteric fruits.
