Lipoxygenase is an enzyme found in various plants, animals, and microorganisms that helps break down fatty acids, particularly polyunsaturated ones like omega-3 and omega-6. It plays a key role in producing signaling molecules called leukotrienes and other oxylipins, which are involved in immune responses, inflammation, and cell growth. Lipoxygenase activity influences processes like allergy reactions, blood flow, and tissue repair. Because of its role in inflammation, it's also studied for potential links to conditions such as asthma and cardiovascular disease.
