IDDSI (International Dysphagia Diet Standardisation Initiative) is a global framework that categorizes liquids and foods based on their consistency. Its goal is to improve safety and nutrition for people with swallowing difficulties by providing clear, standardized labels and descriptions. The system uses levels from 0 to 7, where level 0 is thin liquids like water, and level 7 is regular, regular foods.
