Ginjo is a type of premium sake, a Japanese rice wine, distinguished by its high-quality ingredients and specific brewing process. To be labeled as Ginjo, at least 40% of the rice grains must be polished away, removing the outer layers that contain fats and proteins, which results in a cleaner, more refined flavor. This process, combined with careful fermentation, produces a sake with a fruity, floral aroma and a smooth, complex taste.
