Carolina barbecue refers to a style of barbecue originating from the Carolinas, characterized by slow-smoking meats, primarily pork, over wood. There are two main regional styles: Eastern Carolina, which uses the whole pig and incorporates a tangy, vinegar-based sauce; and Lexington or Piedmont, focusing on shoulder meat with a tomato- or ketchup-based sauce. Both styles emphasize tender, flavorful meat achieved through low and slow cooking, with sauces enhancing, not overpowering, the natural flavors. The cuisine reflects regional ingredients and traditions, often served with sides like coleslaw, hushpuppies, or baked beans.
