The Ark of Taste is a project by the Slow Food organization that aims to preserve and promote traditional, unique, and often endangered varieties of food—such as rare fruits, vegetables, grains, and cheeses. It highlights foods with cultural, historical, and culinary significance that might otherwise be lost due to industrial agriculture and globalization. By raising awareness and encouraging responsible consumption, the Ark helps protect these diverse foods, supporting local farmers, cultural heritage, and sustainable food systems for future generations.
