Amylases are enzymes that help break down starches, which are complex carbohydrates found in foods like bread, potatoes, and grains, into simpler sugars such as glucose and maltose. This process begins in the mouth during chewing and continues in the small intestine, facilitating digestion and providing energy. Produced mainly by the salivary glands and the pancreas, amylases play a crucial role in efficient nutrient absorption. Without amylases, our bodies would struggle to extract and utilize the energy stored in starchy foods, highlighting their importance in normal digestion and metabolism.
