Aflatoxin B1
Aflatoxin B1 is a toxic substance produced by certain mold fungi, mainly Aspergillus flavus and Aspergillus parasiticus, which commonly grow on crops like grains, nuts, and legumes in warm, humid conditions. When these contaminated foods are consumed, aflatoxin B1 can be harmful, especially to the liver, and is linked to an increased risk of liver cancer. It is considered a potent carcinogen. To reduce risks, proper storage and handling of food products are essential, and regulatory agencies set limits on acceptable aflatoxin levels in food and feed.
