Vinsanto is a traditional Italian dessert wine from the island of Santorini, made primarily from sun-dried white grapes, typically Assyrtiko, along with others like Athiri and Aidani. The grapes are carefully dried to concentrate their sugars and flavors before fermenting, resulting in a rich, sweet wine with complex aromas of dried fruit, honey, and spices. Often aged in wooden barrels, Vinsanto boasts a balanced sweetness and acidity, making it ideal for pairing with desserts or cheeses.
