
Vin Santo production process
Vin Santo is a traditional Italian dessert wine made from dried grapes, typically Trebbiano and Malvasia. After harvest, grapes are gently pressed and then laid out to dry on straw mats or racks, concentrating their sugars. This drying process lasts several months, during which grapes lose moisture and develop rich flavors. The dried grapes are then crushed and fermented slowly in wooden or stainless-steel vessels, often taking years. The wine is aged in small barrels called caratelli, allowing flavors to mature and develop complexity. The result is a sweet, aromatic wine with a balanced acidity and smooth finish.
