Trinitario is a prized variety of cacao, developed in Trinidad in the 18th century from crossing Criollo and Forastero types. It combines the fine flavor qualities of Criollo with the robust yield and disease resistance of Forastero. Grown mainly in the Caribbean, Central, and South America, Trinitario beans are known for complex, balanced flavors with hints of fruit, floral, and nutty notes.
