Surimi production involves transforming raw fish into a paste that can be shaped into various seafood products. First, fresh fish—typically white, lean fish like pollock—is cleaned, filleted, and deboned. The fish meat is then washed to remove fats, blood, and unwanted components, resulting in a smooth, odorless paste. This paste is mixed with water, salt, and sometimes starch or other additives for texture and flavor. The mixture is then shaped into blocks or other forms, heated to coagulate proteins, and cooled. The final surimi can be used to create products like seafood sticks, crab analogs, or other imitation seafood items.
