
Stilton
Stilton is a renowned English cheese known for its creamy texture and distinctive blue veining. Made primarily from cow’s milk, it develops its characteristic flavor through inoculation with mold spores, which create the blue streaks. There are three types: Blue Stilton, which is crumbly and rich; White Stilton, which lacks the blue mold and has a milder taste; and Backstraw Stilton, a less common variety. Stilton is often enjoyed on its own, with crackers, or added to dishes for its tangy, savory flavor. It’s protected by geographical indication status, meaning true Stilton must be produced in specific regions of England following traditional methods.
