Rind

Rind is the outer protective layer of fruits like oranges, lemons, and watermelons. It serves as a barrier against physical damage, pests, and disease. The rind consists of the outermost skin (epidermis) and the underlying layer called the mesocarp, which contains aromatic oils and sometimes thick, spongy tissue. Although it’s often discarded when eating, the rind can be used in cooking, baking, or for zesting to add flavor. Rinds vary in thickness and texture depending on the fruit, and they play a vital role in preserving the fruit’s freshness and providing structural support.
