Nihonshudo

Nihonshudo, or the Sake meter value (SMV), is a measurement used to indicate the dryness or sweetness of sake, a traditional Japanese rice wine. It is a numeric scale where positive values suggest a drier sake, and negative values indicate a sweeter one. For example, a sake with an SMV of +5 is quite dry, while an SMV of -2 would be fairly sweet. This measurement helps consumers and producers select and categorize sake based on their taste preferences, making it easier to match sake with particular foods or occasions.
