light-struck flavor

Light-struck flavor is a bad taste in beer caused by exposure to light, especially ultraviolet (UV) light. When beer is bottled in clear or green bottles, UV rays break down the hop compounds, creating sulfur-like compounds that produce a Skunky or rotten smell and taste. This reaction is similar to how certain plants or chemicals change when exposed to light. To prevent this, breweries often use brown bottles that block out most UV light, preserving the beer's intended flavor. Light-struck flavor is a common issue but easily avoided with proper packaging and storage.
