
Lager Yeasts
Lager yeasts are specialized strains of yeast used to produce lager beer. Unlike ale yeasts that ferment at warmer temperatures, lager yeasts—typically Saccharomyces pastorianus—ferment at cooler temperatures, which leads to a cleaner, crisper taste. They work slowly and settle at the bottom of the fermentation vessel, hence the name "bottom-fermenting" yeasts. This process results in lager beers that are often smoother, lighter, and more refreshing.
