Green coffee beans are coffee beans in their raw, unroasted state. They are the seeds of coffee cherries that have been harvested and processed but not yet subjected to roasting, which develops the flavor and aroma we associate with brewed coffee. Green beans have a pale greenish hue and contain higher levels of chlorogenic acid, which can have health benefits. They are often used in supplements and extracts for weight loss or antioxidant properties. To make coffee, green beans are roasted, transforming their flavor, aroma, and color into the familiar dark brown beans used for brewing.
