Glutinous rice
Glutinous rice, also called sticky rice or sweet rice, is a type of rice with a high starch content, primarily amylopectin. This starch gives it a sticky, glue-like texture when cooked, making it ideal for dishes requiring cohesion, such as sushi, rice cakes, and desserts. Unlike regular rice, glutinous rice becomes very sticky and clumps together, facilitating shaping and sticking. It is often used in Asian cuisines and can be consumed steamed, boiled, or processed into flour or paste. Despite its name, it does not necessarily contain gluten and is safe for those avoiding gluten.
