Ceylon cinnamon
Ceylon cinnamon, also known as "true cinnamon," is a fragrant spice derived from the inner bark of the Cinnamomum verum tree native to Sri Lanka. It has a delicate, sweet aroma and a mild flavor, making it popular for both culinary and medicinal uses. Unlike Cassia cinnamon, which is more common and has higher levels of a compound called coumarin, Ceylon cinnamon contains very low amounts of coumarin, making it considered safer for regular consumption. Its fine, layered bark also distinguishes it visually from the thicker, harder Cassia cinnamon sticks.
