Cave aging

Cave aging is a natural process used to add unique character and improve the flavor of spirits like whiskey, brandy, or rum. It involves storing the liquid in sealed containers, such as clay or ceramic vessels, within a cave or cool, humid environment. Over time, the spirit interacts with the vessel’s material and the surrounding environment, developing richer, more complex flavors. Unlike traditional barrel aging, cave aging often occurs in the absence of wood, allowing the focus to be on the spirit’s intrinsic qualities and subtle nuances shaped by extended exposure to the cave’s microclimate.
