Beerenauslese (BA) is a German wine classification for high-quality, sweet Rieslings made from individually selected late-harvest grapes that are heavily affected by noble rot (Botrytis cinerea). This process concentrates the sugars, flavors, and aromas, resulting in a rich, luscious wine with complex notes of honey, dried fruit, and spice. BA wines are typically made from grapes that are very ripe or shriveled, and they often have a balanced acidity to complement their sweetness.
