Bacillus cereus

Bacillus cereus is a type of bacteria found in soil, water, and some foods, particularly rice and other starchy items. When these foods are not stored properly, the bacteria can grow and produce toxins that may cause food poisoning. Symptoms often include nausea, vomiting, and diarrhea, usually developing a few hours after eating contaminated food. While it’s generally not serious and usually resolves quickly, proper food handling—such as cooling cooked food promptly and reheating thoroughly—can prevent infection. Bacillus cereus is a common cause of foodborne illness but is easily managed with good hygiene practices.
